Decadent Cookie Bars
These bars are Tim’s favorite, and I’ve made them many times for friends and family. They are easy to make, which is good because they usually don’t last long and before I know it, someone is hinting that could I please, maybe make some more . . .
½ cup butter, melted
1/3 cup granulated sugar
½ cup dark brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 teaspoon coffee or ½ teaspoon almond extract
1 cup all-purpose flour
½ teaspoon salt
½ cup milk chocolate chips, divided
½ cup white baking chips, divided
1 cup coarsely chopped walnuts, divided or 1 cup coarsely chopped pecans, divided
Preheat oven to 350° F. Grease a 9-inch square brownie pan.
In a small bowl, combine flour and salt. Set aside.
In a mixing bowl, whisk together melted butter, granulated and brown sugar. Whisk in egg and extracts.
Add flour/salt mixture, gently stirring until just barely moistened. Fold in ¼ cup of chocolate chips, ¼ cup white chips, and ½ cup nuts. With a spatula, spread batter in prepared pan. Sprinkle with remaining chocolate chips and walnuts.
Bake for 35 to 40 minutes, until set and edges just begin to turn golden brown.
Cool in pan on rack until slightly warm, then cut into rectangles.
