Homemade Jamaican Jerk Seasoning

I couldn't find my usual jerk seasoning at the grocery and it is a requirement for this week's recipe: Tropical Chicken Fajitas. So, I did a little research, blended a little of this and a lot of that and came up with my own version using the herbs and spices already handy in the kitchen. Using a mortar and pestle, it only took a few minutes to put together, plus it saves money. Adjust the ingredients to suit your own taste and level of heat. Keep this spicy blend this on hand as things heat up during grilling season!

Ingredients:
1 tablespoon garlic powder
1 tablespoon dried onion flakes
1 tablespoon dried parsley
1 tablespoon honey powder or brown sugar
1 tablespoon sea salt
2 teaspoons dried thyme
2 teaspoons smoked paprika
2 teaspoons salt
1 teaspoon cayenne pepper (or more, if you are a “hothead.”)
1 teaspoon red pepper flakes
1 teaspoon ground allspice
½ teaspoon ground nutmeg (use a microplane and grate it fresh!)
½ teaspoon ground cinnamon
Directions:
Combine all ingredients well and store in an airtight glass jar away from light and heat. Shake or stir before each use.
